Strawberry Pizza

In our last email we asked for your favorite Strawberry recipes, here is our first reply

Strawberry Pizza       from Susie Davis

Crust:

Preheat oven to 350

Pkg Yellow cake mix

1 stick of butter

1 egg(slightly beaten)

 

Melt butter, add beaten egg and mix.  Add yellow cake mix and stir until thoroughly mixed.  Press into a sheet cake pan (11×15?).  Bake for approximately 15-18 minutes-cool completely.

 

Filling:

2 pkgs of cream cheese (softened)

¾ c. sugar

2 large (2lb?) packages of strawberries (about 6 cups)

Glaze (purchased or see recipe below)

 

Mix cream cheese and sugar thoroughly until well blended and creamy.  Spread on cooled crust.

Remove stems from strawberries and slice (especially the large ones); gently stir glaze into strawberries.

Spread strawberry mix over cream cheese and chill at least an hour before serving.

 

Glaze:

2/3 cup white sugar

1 cup water

4 tablespoons strawberry flavored gelatin

4 tablespoons cornstarch

Directions

1.     Mix together the sugar, water, gelatin and cornstarch in a medium large saucepan. Boil for one minute. Remove from heat. Cool somewhat before adding to strawberries.
